Breakfast Although it’s a frequently skipped meal, breakfast is actually one of the simplest meals to prepare and often takes just a few minutes away from your hectic morning routine. And since typical breakfast foods can often be portioned out in single servings, you won’t have to worry about saving leftovers before rushing out the door. Eggs provide a healthy amount of protein and can be eaten a variety of ways - add scrambled eggs to a whole wheat tortilla with black beans and salsa or make them into an omelet with diced tomatoes, onions, peppers and mushrooms.

Boiled eggs are portable. Or, top oatmeal with fresh fruit and a drizzle of honey to start your morning with complex carbohydrates and plenty of fiber. If you’re eating on the run, try a fruit and yogurt smoothie or a whole grain pancake smothered in peanut butter and rolled up into a convenient little package. Lunch Some people can eat the same exact sandwich every day for lunch.

Try a traditional salad with tomatoes, onions and shredded carrots one day, but then switch it up and top your greens with black beans, olives and banana peppers the next day. Make sandwiches on traditional bread, whole wheat pita and whole grain tortillas.

Tuck shredded or thinly sliced veggies, sprouts, pickles and hard boiled egg whites into the mix. With a bit of culinary creativity, you could probably eat a different sandwich every day for an entire month. Freezer Meals Try to avoid pre-packaged freezer meals, because they tend to be high in calories and packed with fat, cholesterol, sodium and sugar. Instead, take a few hours on the weekend and prepare your own healthy freezer meals. Large pots of soup and chili can be easily poured into small containers and frozen. Baked ground turkey meatballs can be tossed into the freezer and then thawed and heated before being added to pasta or sandwiches.
